This vegetable related to cucumbers, squash and melons is a native to the higher altitudes of the Andes. It is grown from Colombia to argentina to Bolivia and is a favorite vegetable of this region. The fruits are hollow, they can be eaten when young in their entirety like gherkins or cucumbers. When mature, the black seeds are scooped out and the entire fruit is filled with stuffing and baked or simmered and served as a delightful dish. Fillings range from rice to meats. The vines are vigorous, they need rich soil, ample moisture and thrive in cool wet weather. They produced heavily as far north as Southern Canada and well in Upstate New York. The vine itself is edible and the young leaves can be eaten in salads or all leaves can be cooked as a potherb. A wonderful plant for children, sure to gain a foothold in gardens across North America.

What are the pros? Plant and that is it!

What are the cons? None

Review:

These grew very easily in our wet conditions on Vancouver Island. Needs a trellis, and the vines are beautiful with very prolific producers of accocha. Tasted great at all stages. Very easy to seed save also, as seeds look like puzzle pieces.
