What are the cons? slightly bitter
The same exact thing happened to me. I was harvesting my beets today and pulled up a white one. At first I thought it was a turnip, but no purple around the top. Boiled it and skinned it, then cooked it up with some butter, parsley and brown sugar - a tad bitter - not as sweet as others have reviewed, but it was really big so probably should have picked it sooner. Anyway, looks and tastes just like a beet, but white. Interesting surprise!
