(Borago officinalis ) Cucumber flavored fresh leaves are added to salads, cooked or made into a cooling drink. The blue flowers are used as a garnish. Makes a good honey plant. Also has reputed medicinal uses.

What are the pros? Mild, sweet taste

What are the cons? leaves too fuzzy

Review:

I liked the gorgeous blue flowers in my salads, but the leaves were too fuzzy to really enjoy, even chopped up. The bees really liked it, also the butterflies. I planted them in my mandala beds, but they got 4 feet across(!) and 2 feet tall, so they crowded out some other plants. Some leaves were fully 2 feet long. This year I will plant them in the corners, so they can spread as they like, and not interfere with their neighbors. This herb is pretty enough to be a showcase plant in a flower bed. I had a few volunteers the following year, and none the next. That was disappointing. I really like this plant, and will grow it again.

What are the pros? loved by bees, pretty

What are the cons? very large, prickly

Review:

I added this to bring bees to my garden and because it is a recommended companion plant for a lot of things. It was pretty and did a great job bringing bees, but it got huge and took way more space than I was anticipating. I also had to be careful when working around it as it is quite prickly.

What are the pros? Fast, Prolific, Delicous

What are the cons? Need to be staked

Review:

Grows well in the Pacific Northwest, even in my limited sunlight garden. The bees go crazy for it. The flowers do taste almost exactly like cucumber with no burpy repercussions! The leaves are good too until they get too hairy, at which time I used them in smoothies to add the cool cucumber flavor. They do get large and then mine fell over. I ended up supporting them with tomato cages turned upside down since I didn't know this would be an issue. Next time, I'll stake them properly when they are small. Where has this gem been all my life?

What are the pros? Attracts pollinators!

What are the cons? none :)

Review:

Borage is an excellent companion plant for almost everything, and is edible, too. Pretty blue flowers attract pollinators like crazy (and can be candied or used in salads). Self-seeds for next year. Gets as large as a bush with good rain. I plant a strip of borage with sunflowers, cosmos, zinnias, etc. More butterflies and bumble bees than I've ever seen this year -- even a hummingbird moth!
