Chimayo Pepper

Legendary, thin-walled drying type from northern New Mexico. Uniquely complex flavor have earned this a small but faithful following. So singular that it is offered as a unique type in local markets, and was well known throughout the Southwest in the late 1800s. Heat is typically very mild. Ripens green to red, and dries a distinct deep red color. Rare and very special!

What are the pros? none

What are the cons? diseased

Review:

Grew 28 varieties of hot and sweet peppers this year. This was the only one that got diseased. Fruit misshapen and gnarly.

What are the pros? Prolific, early, flavor

What are the cons? Branchy

Review:

Grew this last year at 5,800 feet in Colorado. Had 4 plants, two were very productive, two not so much. The two good plants produced abundant small (2-3") fruits. Used fresh (green and red), they have great, grassy flavor, some with little heat, but some around jalapeno strength. Hotter for fruit that developed during hotter weather. Got plenty of red peppers, did a couple rounds of drying. Air drying yielded more fresh, fruity flavor. Dehydrator yielded more deep, rich flavor. Either way, the fruit made great medium heat chile powder and fantastic New Mexico style red chile. The only real issue is the plants have a tendency to be branchy and sag to the ground once fruit sets. But they don't break and I didn't have any trouble with rot for the peppers that matured on the ground. Some were on the ground for a month before maturing and picking. Just washed off the dirt and moved on.

What are the pros? Taste

What are the cons? Growth habit

Review:

Grew only 2 plants and both grew very short (less than 1 foot tall) and very wide - 2 to 3 foot spread. Due to the short height of the plant, the peppers tended to drag on the ground. Not sure if this is typical of the variety or if I just ended up with 2 odd plants. I grew 15 varieties of peppers this year and this is the only one that did not grow upright. The flavor was good (dried and ground some, smoked and ground some) so I will plant again next year and see if I can train them to grow taller.

What are the pros? First to ripen, full flavor

What are the cons? Sprawly

Review:

Really happy with this pepper. It was so early, and gives a lot of peppers. The taste is very sweet with a little bit of heat to follow. A very versatile pepper. I will always grow it.
