Congo Amaranth

NEW! We loved growing and cooking this delicious variety from the Democratic Republic of Congo, brought to us by a friend who is an aid worker at a religious school. In Congo this crop is one of the staples of their diet, being a source of vitamin A, C, as well as calcium, iron, potassium, and zinc. The young leaves are amazing cooked like spinach, and the tall plants produce abundantly and yield green flower heads.
