(Vigna aconitifolia) Moth beans are all but unknown in the US, that is a shame because they are wonderfully adapted to hot arid conditions and do well even in hotter wetter places.. They basically like the same conditions as Cowpeas to which they are closely related. Moth Beans are also called Matki beans, they are a very common food pulse in India. Dried Moth Beans have almost 25% protein by weight and hence they are very nutritious. The plants creep a bit but are totally manageable. The dried beans are used in a myriad of ways in India and it is worth it for Americans to put more attention on this special crop.
