When my step children first came to live with me they adamantly declared they would not eat BEETS! After grating these and just quickly sautéing them in a little butter until crisp tender they could never get enough of them. They lasted for months in our root cellar and even the beets that grew to be HUGE were tender and sweet. I wonder if these were some kind of cross between a beet and a sugar beet? They are that good!
