This is a terrific beet to grow in the fall, because it stores well. It gets very large - I've grown some that weigh a pound - if you plant early enough. Here in northern Virginia I plant at the end of July. Beets taste best if you fertilize with kelp meal because that adds trace minerals to the soil. The greens are terrific, too.
Watch out for the thin (1/16") thread in the middle of these beets when you prepare them.
I roast these, covered, in the oven for 1-2 hours, depending on the size of the beets.
