This is a nice carrot of good size and excellent flavour. Carrots can be tricky to grow in Houston....there's a sweet spot between not enough daylight in the winter and too much heat in the summer. These hit that sweet spot. I left a few in the ground over the summer of 2015 and despite the usual summer heat, they didn't get too bitter. If they are sown in the fall, they take longer to mature and don't get nice and orange until about February. On the plus side, they keep just fine in the ground over the winter and they taste nice even after a few months of storage.
The greens are lovely pureed into a pesto with basil, garlic, and arugula. They also taste good chopped up and fermented in homemade sauerkraut.
