Everyone has been writing about how they use red orach in salads so I wanted to add a suggestion you may like to try: soup! In Romania, where I was born, red orach soup is a traditional spring soup that is VERY popular and tasty. In the States, since I haven't been able to find orach at any grocery store, I went for a very long time without this soup, until I learned to grow my own thanks to rareseed.com.
