This excellent bush bean is still a great favorite among the Pennsylvania Dutch, although now rare in its Old World home. The 16-inch tall plants produce long flat pods that are considered the best for making bean “schnittels” (French-cut beans for pickling), the white beans are also excellent for soup, especially when cooked with veal. Very quick to mature if planted in early June, crops come to harvest within 50 days. Don’t forget to serve these beans with a traditional bouquet of fresh summer savory!
