(Phaseolus vulgaris) The Pink Quartz Bean is one of many famous “Pink” beans of Mexico and the Caribbean. These small prolific beans do very well with weather that is dry as long as they are irrigated. The beans themselves are small, thin skinned and very meaty when cooked up with a farinaceous (slightly flour-like consistency). They are beautiful beans with their delicate pink color. Joe feels that someone somewhere should select over a few generations to further “refine” their aesthetical quality. Maybe a few years down the line someone will discover an outcross or sport that really has a translucent pink skin!
