The Thai people love cooked greens, and this leafy green amaranth is a favorite. It produces loads of large, tender leaves right through the hot summers even here in Missouri, when most other greens are long gone. Leaves are great cooked as you would spinach, as they have a similar flavor when cooked. It is a green we always love when we travel to Thailand as well as at home in our gardens. So easy, but almost unheard of in America.
