I planted these along with Italian and Japanese type eggplants. All were good crops direct planted in my raised beds. (Had to get past the aphids during their seedling stage.) All stored well in refrigerator bins. But these Thai White Ribbed eggplants outshone the others when thickly sliced and baked as bases for veggie pizzas! As they came in I would season, brush with olive oil and bake, then freeze slices on pans, remove and stack between wax paper to store in freezer. Wonderful low carb eating that was better than other types for this purpose. Looking forward to growing more of these again to stock freezer!
