The Perfect Winter Salad

With the number of winter farmers markets skyrocketing across the country, Americans are being reintroduced to some of the delicious heirlooms that have sustained our ancestors through cold winters for generations. Some may believe that eating locally and with the seasons is limiting. On the contrary, local farmers have presented us with a diverse bounty of produce that is fresh and colorful. Trends are beginning to come full circle as the American consumer has begun to drift away from the convenience of rock-hard tomatoes available year round and begun to embrace the splendor of sweet fall spinach or the brief but wonderous whirlwind that is fiddlehead season.  Instead of fighting the seasons and dragging under-ripe food kicking and screaming halfway across the world, we are learning to cherish seasonal milestones again: super sweet beets after the first frost, the first tender asparagus of the season or a vine ripened heirloom tomato. This winter salad is a salute to those who live for the bright magenta that watermelon radishes splash across winter’s bleak canvas, and to those who have discovered that there is no need to totally outsource our vitamin c needs to subtropical fruits when local fennel can provide such nutrients without the carbon footprint. file_thumb

Watermelon Radish, Fennel and Grapefruit Salad

  • 1 Grapefruit Segmented
  • 2 watermelon radishes shaved paper thin
  • Fennel Shaved Paper thin
  • 1 orange segmented
  • 2 T agave nectar
  • 2 T apple cider vinegar
  • 1 T grated Lemongrass
  • 3 T olive oil
  • Sea salt to taste
  • Pepper to taste


1.      Segment citrus and reserve in bowl

2.      Whisk agave, olive oil and lemongrass together in a bowl

3.      Toss all ingredient together in mixing bowl.Season well with salt and pepper

4.      Mix all ingredients together well and season with salt and pepper
