(Amaranthus cruentus). This native amaranth from Guatemala flowers light green. It is primarily used for grain rich in vitamin B, vitamin A, vitamin E, and iron. This variety has been revived in the Maya communities of Baja Verapaz after almost being lost during the civil war. It is named for Aurelia, the woman whose family revived and saved seeds of this amaranth. How to Sow and Plant

Sow seeds 1/8 inch deep in fertile, well-draining soil and cover lightly. Thin seedlings to 10–12 inches apart once they emerge. Amaranth prefers full sun but tolerates partial shade. Keep soil moist during germination.

How to Grow

Water regularly, especially in dry conditions, and mulch to retain moisture. No fertilizer is needed unless the soil is poor. Harvest young leaves for salads or allow plants to mature fully for seed production.

  • Cut and hang upside down in a paper bag to finish drying
