I absolutely love Chiogga Beets! These were by far the best of the four varieties I grew (Detroit Red, Gold, and Bull's Blood). They are sweet little sugar bombs when roasted!
I clean them, roast them with the skins on wrapped up in aluminum foil and drizzled with a teaspoon of olive oil, then after they are cooked tender, slip off the skins. Mine cooked up white with a light blush of pink on the outside. My grandkids hate vegetables, and it is a struggle to get them to eat veggies. I made a huge mixing bowl full of these roasted beets and was letting them cool when my granddaughter asked me what they were, and I told her to try one and find out. So she popped one in her mouth, goes WOW! And five minutes later she had eaten the entire mixing bowl full! And no wonder - they are earthy, yet very sweet. They grew very easily and were not touched by heavy Japanese Beetle infestation.
