(Zea mays) Flour Corn. The Cudu corn is a beautiful spotted variety that traces its roots back to a historic Native American type. Ed Schultz, a noted Montana corn breeder, began with a seed sample from the USDA, originally donated by Oscar Will in 1958, which had suffered from inbreeding and loss of its distinct blue eagle markings. Schultz crossed the true Cudu corn with a small percentage of Papa’s White corn to enhance its adaptability to northern climates, successfully developing long, slender ears with striking blue-spotted kernels. His efforts not only preserved but revitalized this ancient variety.
