They're kind of miraculous. They start out with purple stripes, but when you cook them they turn vibrant green.
They start out fuzzy and sticky and end up smooth and delicate when cooked. I don't think I can let them get old enough to pick dried beans! They're that good. Raw in a salad or blanched for two minutes and shocked, they are my favorite thing our garden produced this year. Better yet, urban vermin seem to have left them alone.
