Description

(Solanum melongena). This lovely 8-inch x 4-inch neon lavender-pink fruit has a mild, sweet, white flesh. The skin is tender and not bitter. Produces excellent yields. This incredible heirloom was developed in Puerto Rico in the 1940s by the Puerto Rico Agricultural Experiment Station, Rio Piedras. One of our favorites every season.

Start seeds indoors 8-10 weeks before the last expected frost date. Transplant outdoors when nighttime temperatures stay consistently above 55 F, and soil temperatures are at least 65 F. Rosita Eggplant grows well in USDA zones 5–10, performing best in warm regions. In cooler climates, use row covers or black plastic mulch to retain soil heat and extend the growing season. How to Sow and Plant

Sow seeds 1/4 inch deep in seed-starting mix, keeping the soil temperature between 75-85 F during germination. Harden off seedlings for 7–10 days before transplanting. Plant them in full sun, spacing plants 18 inches apart. Enrich the soil with compost or aged manure, ensuring it is fertile and well-draining with a pH of 6.0–7.0. Apply mulch to retain moisture, suppress weeds, and regulate soil temperature.

How to Grow

Water deeply 1–2 times per week, keeping the soil evenly moist but not waterlogged. Fertilize regularly with a balanced or high-potassium fertilizer once plants begin flowering and setting fruit. Protect against pests like flea beetles and aphids with row covers or neem oil, and ensure proper air circulation to prevent fungal diseases. Harvest when fruits are firm, glossy, and 6–8 inches long.

How to Save

  • Eggplants are not insect-pollinated, so it is not necessary to isolate the plants very much to ensure pure seed. For home gardeners, an isolation distance of at least 40 feet is sufficient for seed saving.
  • Allow fruit to become overripe; the fruit will become slightly wrinkled and soft.
  • Scoop seeds out, rinse, and spread out to dry thoroughly. 
  • Properly stored eggplant seeds will remain viable for up to 4 years.
