Description

(Allium sativum). Hardneck, purple stripe variety. Very attractive at garden markets! This is a milder variety with a slightly higher-than-average sugar content, making for a sweeter-flavored bulb with a buttery texture that's a little easier on the stomach than some of the stronger types.  Roasts well, and it's perfect for recipes where you don't want the garlic to overpower other flavors. Stores very well!

Growing Tips

Vietnamese Red garlic is a robust and very hardy variety that will do well in both northern and southern regions. It will do best in zones 2-7. Plant in fall for best flavor and bulb size. Mulch to protect from heavy cold.

When to Grow

The ideal time to plant Vietnamese Red garlic is in the fall, typically between late September and November, before the first freeze. This allows the garlic to develop roots during the fall and winter. In warmer climates where the soil does not freeze, planting can extend into late fall or early winter. Spring planting is possible but may result in smaller bulbs.

How to Sow and Plant

Separate the cloves, leaving the paper skins intact as much as possible.  Plant about 1 inch deep with the root sides facing down and the pointy end facing up.  Space plants about 4” apart in rows about a foot apart. Cover with mulch if desired to protect from extremely harsh winter weather. Fall-planted garlic generally emerges in spring, but may appear in late winter. Spring-planted garlic will emerge after 2-3 weeks, and will generally produce smaller heads than fall-planted garlic.

How to Grow

Maintain consistent moisture, ensuring the soil is not waterlogged. Apply a balanced organic fertilizer monthly during the growing season to promote healthy growth and bulb development. Mulch and/or remove any weeds promptly to prevent competition for nutrients and space. In late spring, pull or cut the scapes before they flower, after they have started to curl, to encourage larger bulb growth.

What can I do with the scapes?
The scapes are delicious and can be used the same way you would use green onions, for example in stir fries or raw in salads or as a tasty garnish. They are also good when made into quick refrigerator pickles. Pluck them before the flowers appear.

Can Vietnamese Red garlic be grown in containers?
Absolutely! It will do very well in large, deep containers and raised beds.

How often should I water Vietnamese Red garlic?
Waterdeeply every 7-10 to ensure the soil is consistently moist, but do not allow it to become waterlogged. As it gets closer to harvest time, water less often to allow the leaves to dry and the bulb to develop its flavor.
