Can't wait to try your plants, but thought you might want to know my experience growing these from grocery-store roots. Fat grocery store roots with tiny nubbins at the joints WILL grow...after months of waiting and watering carefully, in windowsill pots. But plants already started will be much more reliable. (50% loss of the store-bought ones, during attempts to root them.) PLANT IN GIANT, DEEP POTS in non-tropical areas. Regular pots gave stunted baby rootlets. And growing in pots does work if you have a sunny windowsill or lights on timers in a basement "grow-room." About six months after the plants began to grow, I got little-finger sized ginger roots in my 5"-deep pots. (Morals of the Story: Buy plants, not plain roots; plant in deep, wide pots.)
