We live at around 7000' here in Colorado and the seasons can be very short and unpredictable here. We have always loved growing unusual things and love that Baker Creek has so many unusual plants to choose from. We were excited to try the jicama but knew it would be a little iffy at our location. We started seed in early March and then transplanted them out into our high tunnel around the end of April. The first year we grew them (we had started them later then we do now) I was disappointed at first as the plants never got very big. I was surprised though when early fall I stuck my finger in the ground and found a nice sized jicama underneath. The next year we started them earlier and they grew larger and produced two to three jicamas per plant that averaged around two pounds each. These have now become part of our staple crop for market and it is awesome to be able to finally taste a homegrown jicama! Very sweet, juicy and crisp! They do split easy with over watering though.
