Believed to have been introduced by Spanish explorers in the late 18th century, it has been cultivated for over 200 years by the Makah Nation in Washington State. Its elongated, slightly lumpy tubers have thin, tan skin and creamy white flesh with a firm yet buttery texture and rich, nutty flavor.
