What are the pros? tender, crispy texture
What are the cons? can break when harvested
I have grown a bunch of carrot varieties over the years, but I keep coming back to the St Valery. The texture is perfect for raw eating--tender, crispy and juicy. The flavor is sweet and mild. In my Colorado garden, I can harvest them all summer with no loss of flavor or texture. They are not prone to cracking, but you do have to be careful when pulling them--they'll break in half if planted in heavy soil. The carrot tops are small, so you can grow a lot of these in a small space.
