Bean Seeds, Hyacinth

(Lablab purpureus) A vining member of the legume, or bean, family, this deeply dramatic ornamental is amazing in the landscape and has gained popularity as a cut flower for both its fragrant blooms and its brilliant purple pods. The young, tender pods can be eaten raw or used in stir-fry and curry dishes. Dried beans must be soaked and cooked thoroughly, as they are slightly poisonous if eaten raw.
