(Ipomoea batatas). Your order contains 5 plants. Plump, drier-fleshed type of sweet potato. It is medium-sized, creamy-golden skinned, and has cream-colored flesh. Remains firm and solid even when cooked. A delicious type for curries, and stews and perfect as sweet potato fries. An old-fashioned favorite that has appeared on the tables of New Jersey families since 1780.

Jersey Yellow sweet potato is an heirloom variety that grows best in loose, well-drained, sandy soil with a pH of around 6.0. This vigorous, high-yielding plant thrives in warm weather and needs a long growing season. Provide full sun and water regularly, especially during early growth. Avoid high-nitrogen fertilizers, as they cause excessive vine growth at the expense of tubers.
When to Grow
Plant Jersey Yellow sweet potatoes after the last spring frost, when soil temperatures reach at least 60 F. This variety thrives in USDA zones 7-11, where the growing season is long and warm. In cooler climates (zones 6 and below), sweet potatoes can be grown using raised beds, black plastic mulch, or row covers to help warm the soil. How to Sow and Plant
When your Jersey Yellow slips arrive, hydrate them by soaking the roots in water or wrapping them in a damp paper towel before planting. After the last frost, plant in loose, well-draining soil. Loosen the soil 12 inches deep, form 8-inch-high mounds, and space slips 12-18 inches apart in rows 3-4 feet apart. Plant slips 2-3 inches deep, burying the roots and lower stem while keeping the leaves above soil level. Immediately mulch with plastic or a thick layer of straw to suppress weeds, retain moisture, and warm the soil. Water thoroughly after planting and keep the soil moist as plants establish.
How to Grow
Keep young plants well-watered as they establish. Once the vines spread and mature, they become more drought-tolerant, and watering can be reduced to every few days. You can fertilize lightly with a low-nitrogen fertilizer (such as 5-10-10) about 3-4 weeks after planting to encourage tuber development rather than excessive vine growth. Since vines spread widely, give them plenty of space.
