Description

(Solanum lycopersicum). A unique, pepper-shaped fruit in vivid crimson color from New Jersey, this variety is perfect for bright red, robust sauces as well as for fresh eating. The tomatoes average 6 inches in length and are very meaty with few seeds. A later maturing variety, but so worth the wait, as the flavor is incredible and the yields are high. It was a pillar of the once legendary New Jersey tomato growing industry and is an ancestor to the “Jersey Giant.” This has been one of Jere Gettle’s favorites for decades. Don’t try to make an authentic New Jersey style pizza sauce without this tomato!

Growing Tips

Jersey Devil tomatoes grow best in full sunlight, at least 6-8 hours daily. The soil should be well-draining and nutrient-rich, with a pH range of 6.0 to 7.0. Water consistently, especially during dry spells, to maintain soil moisture. The plants are indeterminate and will need staking or caging to support their growth and prevent fruits from resting on the ground.

When to Grow

Start seeds indoors 6 to 10 weeks before the last frost date in your area. Once the frost danger has passed and temperatures exceed 60 F, transplant the seedlings outdoors. For regions with shorter growing seasons, using row covers or planting in raised beds can help warm the soil and extend the growing period.

How to Sow and Plant

To begin, sow seeds indoors 1/8 inch deep in a seed-starting mix, maintaining a soil temperature of 70-80 F for successful germination. Before transplanting, harden off seedlings by gradually exposing them to outdoor conditions over a week to ten days. When planting outdoors, space plants about 24 inches apart.

How to Grow

At planting time, incorporate compost or a balanced, slow-release fertilizer into the soil. Side-dress the plants with additional compost or fertilizer every few weeks throughout the growing season. To encourage better air circulation and higher fruit yields, prune away "suckers," the small shoots that develop between the main stem and branches.

How to Save

  • Most tomatoes are self-pollinating and don't frequently cross; in a garden setting, separating by 25 feet should prevent 99% of cross-pollination. Or you can bag and hand pollinate for 100% purity.
  • On a small scale, seeds may be scooped from the fruits and dried on a paper towel.
  • For larger quantities or cleaner seeds, fermentation for a few days is recommended.
  • Once dry, tomato seed can be stored in a cool, dry, dark place; good seed retains viability for 5 years or more.
