Commonly called “Sword” Chicory, this variety from Italy has long
spear-like leaves. It is a very productive leaf bearing chicory that can be cut off many times during the growing season and will flush back out with new and fresh leaves. It will grow just about anywhere in the US; it is not drought tolerant so will need good moisture. Adding organic matter to the soil will increase its vigor and productivity. Greens are either added fresh to salads as accent leaves (they have the slight appealing bitterness of other chicories) or they are cooked as a green and served dripping with butter or olive oil.
