(C. baccatum) This rare pepper variety from Brazil puts on a performance worthy of a Broadway show, changing color from purple-flecked creamy white to purple, orange, and finally deep red when mature. Its mild to medium heat (5,000 – 15,000 Scovilles) and fruity complexity make it right at home in salsa, sauces, and marinades. Named for Barra Do Ribiero, a small city along the banks of the Guaíba River, where it is a celebrated part of local cuisine and culture.
