Description

(Capsicum annuum). This variety was introduced before 1860. In the 1880s, this pepper was shipped to the large markets in Paris from warmer areas like Algeria and Valencia. In the 19th century the 6-7-inch long fruit was among the largest offered, and popular with cooks. It produces long, cone-shaped peppers that are perfect for frying and salads. They are sweet and flavorful, but hardly ever offered in America. A good-producing pepper that is reported to be disease resistant.

Growing Tips: Doux d’Espagne peppers thrive in fertile, well-draining soil and benefit from consistent moisture throughout the growing season. Apply mulch to retain soil moisture and reduce weeds. These plants can produce heavy fruits, so staking or caging may be necessary to support stems and prevent breakage as fruit matures. Peppers often appreciate a bit of afternoon shade during the hottest summer weather.

Growing Guide

When to Grow

Start seeds indoors 8–10 weeks before your region’s last expected frost. Transplant outdoors after the soil has warmed and night temperatures are above 60°F. If you’re not sure how to find your first and last frost dates, consult our blog post 'Our Experts Answer Questions, Share Resources.'

How to Sow and Plant

Sow seeds 1/4 inch deep in seed trays or pots with a fine seed-starting mix. Maintain soil temperatures between 75–85°F for best germination. Use a heat mat if needed. When seedlings develop true leaves, transplant to larger containers and continue growing under strong light until outdoor planting.

How to Grow

Transplant seedlings into full sun with well-amended, compost-rich soil. Space plants 18–24 inches apart. Water regularly to keep soil evenly moist and fertilize monthly with a balanced organic fertilizer. Provide support for plants as fruits develop due to heavy fruit yield.

How to Save Seeds

  • Choose fully ripe, deep red fruits from healthy, true-to-type plants.
  • Cut open the pepper and remove seeds.
  • Spread seeds on a screen or paper towel in a warm, dry place out of direct sunlight.
  • Stir daily to ensure even drying.
  • Once completely dry, store in an airtight container in a cool, dark place.
  • Label with variety and year. Seeds remain viable for up to 3-5 years.

What gardeners are saying

  • Truly huge fruit: Peppers often run six to seven inches long and thick-walled.

  • Best roasted red: Sweet, complex flavor once fully red; a favorite for roasting.

  • Heavy late yields: Plants load up in late summer and keep producing to frost.

  • Tall, bushy plants: Dense foliage shades the fruit; cage the top-heavy plants.
