Description

(Lablab purpureus) These beautiful purple pods may be picked when small and tender to be eaten raw or used as a curry and stir-fried vegetable in Asian-style dishes. As with all beans, the dried beans must be soaked and fully cooked before eating. Uncooked mature beans and pods may be poisonous. The long, rambling vine is also very ornamental, with lilac-colored blossoms and purple stems. Thomas Jefferson planted this fine bean at Monticello.
