Description

(Daucus carota). Our favorite orange carrot for juice, with intense flavor, hints of ginger, and an incredible, earthy sweetness! The Vilmorins of France mentioned this variety in 1885 and said it had been grown a “long time” then. A large, handsome variety with bright red-orange, 10- to12- inch long roots.

Growing Tips

This carrot prefers loose, well-draining soil, ideally a loamy or sandy texture, with a slightly acidic pH (around 6.0-6.5). Full sun is essential for optimal growth, though they can tolerate light shade in hotter climates. Regular watering is important to keep the soil consistently moist, which helps prevent the roots from becoming woody or splitting.

When to Grow

Sow St. Valery carrot seeds in early spring, about 2-3 weeks before the last expected frost, or in late summer for a fall harvest. These carrots are hardy and can tolerate light frosts, making them suitable for spring and fall planting. In warmer climates, they can even be grown throughout the winter.

How to Sow and Plant

Direct sow the seeds outdoors at a depth of 1/8 inch, spacing them about 1/2 inch apart in rows 16-24 inches apart. Thin the seedlings to 2-3 inches apart once they are a few inches tall to allow the roots to grow properly. The soil should be kept moist until germination, which can be slow, so consistent watering is crucial during this period. Carrot seeds can be challenging to handle due to their small size, so using seed tape or mixing seeds with sand can help with even distribution.

How to Grow

Maintain steady moisture throughout the growing season to ensure healthy root development. Mulching can help retain soil moisture and control weeds. The St. Valery carrot typically matures in about 70 days. It’s important to avoid letting the soil dry out completely, as this can lead to poor root quality. This variety is also known for its excellent storage properties, making it ideal for long-term use after harvesting.

How to Save

St. Valery carrots are biennial, meaning they will flower and set seeds in their second year. To save seeds, leave some carrots in the ground over winter. In the second year, they will produce flower stalks and seeds. Harvest the seeds once they are dry, then clean and store them in a cool, dry place. Ensure you save seeds from healthy plants to maintain the quality of the variety.
