(Brassica rapa subsp. nipposinica). With their flaming serrated foliage tinged in a deep, fiery red that flickers like a flame, these bring to mind sizzling fireworks. The crimson- crackled leaves are abundant in anthocyanin, a polyphenol known for its health benefits and immune-boosting properties. Ideally, seeds are sown in late summer or early fall. As winter approaches and temperatures drop, the flashy crimson hue of the leaves becomes more pronounced. Unlike its spicier green mizuna cousins, Benigoromo boasts a mild and crisp, subtle mustard flavor, making it best enjoyed raw in salads. The leaves add a striking contrast to green lettuces; however, their colorful pigmentation fades when cooked.
