Description

(Amaranthus cruentus). This native amaranth from Guatemala flowers light green. It is primarily used for grain rich in vitamin B, vitamin A, vitamin E, and iron. This variety has been revived in the Maya communities of Baja Verapaz after almost being lost during the civil war. It is named for Aurelia, the woman whose family revived and saved seeds of this amaranth. We donate 100% of the proceeds of each sale of this item to Qachuu Aloom, a Guatemalan seed saving organization.

Growing Tips: Aurelia’s Verde amaranth thrives in well-drained soil and warm weather. Regular watering and occasional weeding promote lush foliage and vibrant seed heads. It’s both ornamental and edible, offering high-nutrient leaves and protein-rich seeds.

When to Grow

Start seeds indoors 4 to 6 weeks before your last expected frost or sow directly outdoors after danger of frost has passed. Amaranth is a heat-lover and will germinate best in warm soil. How to Sow and Plant

Sow seeds ⅛ inch deep in fertile, well-draining soil and cover lightly. Thin seedlings to 10 to 12 inches apart once they emerge. Amaranth prefers full sun but tolerates partial shade. Keep soil moist during germination.

How to Grow

Water regularly, especially in dry conditions, and mulch to retain moisture. No fertilizer is needed unless the soil is poor. Harvest young leaves for salads or allow plants to mature fully for seed production.

How to Save Seeds

  • Let flower heads mature on the plant until they begin to dry
  • Cut and hang upside down in a paper bag to finish drying
  • Rub flower heads to release seeds
  • Winnow or sift to remove chaff
  • Store seeds in a cool, dry place

FAQ
