Description

(Brassica oleracea). A vintage heirloom cabbage that originated in the region of Verona in northern Italy, with stunning, lightly savoyed violet and green leaves that become more vibrant as the cool weather sets in. Thanks to an appreciation for traditional cuisine, Italians have preserved this variety from antiquity. Whether for its impressive temperature tolerance or its beautiful violet leaves, this treasured heirloom has been kept alive despite the general downsizing of seed diversity. Medium-sized round heads mature 120 days from seeding. With violet-colored wrapper leaves and yellow-green interior leaves, they are an ideal choice for a fall/winter harvest. They are frost hardy, and in warmer areas can be harvested until the New Year.

Growing Tips: Violaceo di Verona cabbage thrives in fertile, well-drained soil with regular moisture. This variety develops dense, medium-sized purple heads and deepens in color with exposure to light frost. Avoid planting where other Brassicas were previously growing to minimize disease risk.

When to Grow

Start seeds indoors in early spring or mid-summer for a fall-to-winter harvest. This variety is cold-tolerant and ideal for overwintering in milder climates. If you’re not sure how to find your first and last frost dates, consult our blog post 'Our Experts Answer Questions, Share Resources.'

How to Sow and Plant

Sow seeds 1/4 to 1/2 inch deep in seed trays or directly in well-prepared beds. Transplant seedlings 4–6 weeks later, spacing them 18–24 inches apart in rows 24–36 inches apart to allow full head development.

How to Grow

Water consistently and mulch to retain soil moisture and reduce weeds. Apply a nitrogen-rich fertilizer once plants are established. Monitor for cabbage loopers and slugs, and use organic pest controls when needed.

How to Save Seeds

  • Violaceo di Verona is a biennial—allow plants to overwinter or replant heads in spring.
  • Isolate from other Brassica oleracea types by 1/2 mile for purity.
  • Allow plants to bolt and flower in their second year.
  • Harvest dry seed pods when fully mature and brown.
  • Dry thoroughly, clean, and store seeds in a cool, dark place.

FAQ

Does the purple color of Violaceo di Verona cabbage deepen in cold weather?

Yes! Cooler temperatures, especially after light frost, intensify the purple pigmentation, making this variety not only beautiful but perfect for winter gardens.

Can I eat Violaceo di Verona cabbage raw?

Absolutely. The leaves are slightly peppery and sweet, with a tender-crisp texture. They’re excellent in salads, slaws, or used as vibrant wraps for healthy meals.

How long does it take for Violaceo di Verona cabbage to mature?

Expect harvests 95-120 days after seeding. Cooler climates may extend the season slightly, but this variety is prized for its reliable winter hardiness and storage quality.
