(Allium ampeloprasum). Elephant garlic is actually a leek, not a true garlic, but of immense utility nonetheless. Its large bulbs contain only a few very plump cloves. The flavor is all garlic! They peel easily, giving you a lot of garlic in a hurry, which is very useful for large recipes like pickles. An old favorite!

Growing Tips: Elephant garlic thrives in full sun and requires at least six hours of direct sunlight daily. The soil should be well-draining and rich in organic matter, with a neutral pH of around 7.0. Adding compost or well-rotted manure before planting can improve soil fertility and encourage healthy growth.

When to Grow

Elephant garlic can be planted either in the fall, about four to six weeks before the first hard freeze, or in early spring. Fall planting allows the garlic a longer growing season, which helps the bulbs to split into multiple cloves. In milder climates, spring planting is also possible, but the bulbs will usually remain as a single large clove if not left for an additional year.
