Description

(Solanum lycopersicum). A timeless classic beefsteak tomato from the collection of legendary heirloom seed expert William Woys Weaver. Ideal for slicing, the fat, oblate fruit about 4 to 5 inches in diameter features maroon or brownish-purple flesh with a red “bloody” center. It received the name Beefsteak because it resembled raw aged beef. This meaty slicer lends itself beautifully to a range of culinary interpretations, and it is especially appreciated for its mighty heft and balanced smoky-sweet flavor. Treat it as a late-season tomato. Due to the heavy fruit, plants should be staked or caged. Weaver’s grandfather was given the seeds by his friend Dr. Harold E. Martin (1888-1959), who used this variety to create the True Black Brandywine tomato. Fejee Improved or True Beefsteak appeared as a new cross or selection about 1883 in the seed catalogs of David Landreth and Robert Buist of Philadelphia.

Growing Tips: True Beefsteak tomatoes thrive in well-draining, nutrient-rich soil with a slightly acidic pH (6.0–6.8). Add compost or well-rotted manure to improve fertility. Choose a spot that receives full sun, as these tomatoes need 6–8 hours of direct sunlight daily. Due to the heavy fruit, plants should be staked or caged.

When to Grow

Start seeds indoors 6–10 weeks before the last frost date for your region. Transplant seedlings outdoors when temperatures are consistently above 60 F. True Beefsteak tomatoes require a long growing season, typically 80–100 days from transplanting to maturity under ideal conditions. How to Sow and Plant

Plant seeds 1/8 inch deep in a nutrient-rich, well-draining seed-starting mix. Keep the soil temperature between 70-80 F during germination, which takes 7–14 days. When seedlings develop two sets of true leaves, transplant them into larger pots or the garden, burying two-thirds of the stem to encourage a strong root system. Space plants about 24 inches apart. Water thoroughly after planting to settle the soil.

How to Grow

Water consistently, aiming for 1–2 inches per week. Water at the base of the plant to prevent wet foliage, which can lead to disease. Apply a balanced fertilizer or compost at planting and side-dress with additional fertilizer when the first flowers appear. Use mulch to retain moisture and regulate soil temperature.

How to Save Seeds

  • Most tomatoes are self-pollinating and don't frequently cross; in a garden setting, separating by 25 feet should prevent 99% of cross-pollination. Or you can bag and hand pollinate for 100% purity.
  • On a small scale, seeds may be scooped from the fruits and dried on a paper towel.
  • For larger quantities or cleaner seeds, fermentation for a few days is recommended.
  • Once dry, tomato seed can be stored in a cool, dry, dark place; good seed retains viability for 5 years or more.
