Description

(Cucurbita pepo). We grew these out at the Baker Creek trial garden and were extremely impressed by how quickly the small bush-type plants started to flower and produce loads of yummy squash. In taste tests in the Baker Creek restaurant, guests overwhelmingly appreciated the nutty, rich flavor of this summer squash that is a hit in India. It produces loads of round, baseball-size fruit great to use as you would any zucchini! A really amazing vegetable and so easy to grow. One of Joseph Simcox’s favorite summer squash finds in years!

Growing Tips: Desi squash is a traditional South Asian summer squash variety known for its early production, compact growth, and rich culinary versatility. Grow in full sun with fertile, well-drained soil and consistent moisture. Harvest regularly to promote continuous fruiting. Desi squash benefits from organic mulch to conserve moisture and suppress weeds, and it performs well in smaller gardens or raised beds due to its bushy growth habit.

When to Grow

Start Desi squash from seed after the last frost date when soil temperatures have reached at least 70°F. In shorter-season areas, seeds may be started indoors 2–4 weeks early and transplanted once all frost danger has passed. If you’re not sure how to find your first and last frost dates, consult our blog post 'Our Experts Answer Questions, Share Resources.'

How to Sow and Plant

Sow seeds directly into warm soil, planting 1 inch deep and spacing plants 24 to 36 inches apart. For earlier harvests, start seeds indoors under grow lights, and transplant after hardening off. Don’t let them become rootbound; don't disturb roots while transplanting. Choose a site with full sun and amend soil with compost before planting. Keep soil evenly moist for best germination and early seedling growth.

How to Grow

Water regularly at the base of the plant to reduce the risk of foliar disease, and avoid overhead watering. Fertilize with compost or organic liquid feed every 3–4 weeks. Desi squash thrives in warm temperatures and requires consistent sun exposure. Monitor for pests like squash vine borers and cucumber beetles, and manage using organic practices like hand removal or row covers.

How to Save Seeds

Note that there are four different species of squash: Cucurbita maxima, C. pepo, C. moschata, and C. mixta. They will not cross pollinate with each other, so it is possible to grow one of each species for seed saving without worrying about cross pollination. If you are planning to save seeds from several varieties of the same species, you can bag the blossoms and hand pollinate to avoid crossing.

  • Allow fruit to fully mature on the vine until the skin hardens and color deepens.
  • Harvest mature squash and cure for two weeks in a warm, dry area.
  • Cut open and remove seeds.
  • Rinse seeds to remove pulp and dry on a screen or paper towel in a well-ventilated area for 2–3 weeks.
  • Store in a cool, dry place in a labeled envelope or airtight container.
